Black sauce tomato- I hear good things about Ananas Noire, but this year

For a black type sauce tomato I purchased from tomatofest.com Carol Chyko's Big Black Paste.
I have a high tunnel which I plant 300 tomato plants in and we sell the produce on site. We grow
More high acid reds than anything, zone 7b. Applause, Bella Rosa, Valley Cat determinates as well as Orange king.
Indeterminate varieties are Lola, Arbason, Peron Sprayless, Ultimate Opener. We also put in two rows of black krim, pink
Berkely tie dye, genuwine, buffalo giant, vorlon, Carbon, black from Tula, carol Chykos big black paste, Kellogg's breakfast, ananas noire,
Aunt rubys German green

Jubilee is at the top of our tomato list. It is a medium sized yellow tomato. Sweet and an easy one to grow.

We freeze, can and dry them, eat alot of salsa and give alot away to friends! I plan on doing about 150 plants in all.
This year I am going to try freezing some, skins and all fresh from the garden, I usually blanch them first but have read fresh works really well. Anyone try this before? About 4 years ago we began freezing our other veggies (beans, turnips, summer squash, etc...) without blanching first, I am so happy we did! They last all winter and taste better than they did when we were going through all that work to blanch them!

It would have been an easier question to ask what I wasn't growing this year, Lol. I'm doing 90 different varieties
this year, 19 of which are cherry. I probably bit off more than I can chew, ha ha. but I couldn't help myself I'm really looking forward to the black mauri (moor) and the Russian black, I also find some cherries to be sweet. Hoping one of these will do it for me this year:) Socalgardegal, if you would like to try the black mauri let me know I have extra seeds of these. I also noticed you had Vorlon seeds, have you grown these?

Have you tried the ones you are growing gvozdika?  Just curious about the taste. Some of the newer varieties are a bit to sweet for me.
