Re: Gardening Kitchen Scraps - Vegetables That Will Regrow
from katjaqu on 03/01/2015 10:01 PMHi Christine,
I never thought of trying the different verities of carrots but that is a good idea.
It really doesn't take long for the carrot tops to start growing. They will flower and then go to seed.
I wonder if you could do that with parsnip tops?

Your dog will definitely love these and you probably will too.
2 large sweet potatoes, cooked, peeled and mashed (2 cups)
3 eggs, well beaten
1 cup unsweetened applesauce
1/4 cup carrots, shredded
4 1/2 cups whole wheat flour
Preheat oven to 350 degrees.
Mix together sweet potato, eggs and applesauce.
Add carrots and flour, mixing into a stiff dough.
Roll dough out onto a well floured surface about 1/2" thick.
Cut into strips or use cookie cutters.
Bake in a 350 degree oven for about 40 to 45 minutes or until crisp. Cool and then move to a wire rack until firm.
