from zackey on 02/23/2015 11:30 PMI love Sungold cherry tomatoes. The plant can get up to 10 feet tall, but the cherries are regular sized. They never make it into the house. Garden eating only and sharing with 5 chickens who love them as much or more than I do!

The Miniature Blue Corn is OP so you won't want to plant it at the same time you plant other corn or it will cross. The ears are about 4" and can be ground into flour for chips.

Libby's Pumpkin Cranberry Bread
from socalgardengal on 02/23/2015 09:43 PMThis recipe is insanely delicious! I made it for the holidays but who says it's only for the holidays. Recipe makes 2 standard loaf pans but I did mini bundt pans and it made 7-8 minis. To die for!!!
*LIBBY'S PUMPKIN CRANBERRY BREAD*
3 C all purpose flour
1Tbsp + 2tsp pumpkin pie spice
2 tsp baking soda
1 1/2 tsp salt
3 C sugar
1 can(15oz.) pumpkin puree
4 eggs
1 C veg oil
1/2 C orange juice
1 C cranberries fresh or frozen
PREHEAT OVEN TO 350° Grease 2 standard loaf pans or whatever you are using.
Combine in large bowl, the flour, pumpkin pie spice, baking soda and salt. Mix to combine. In separate bowl combine the sugar, pumpkin puree, eggs, oil and orange juice. Mix well. Combine the dry ingredients into the wet ingredients. Mix until just blended. Fold in cranberries.
Bake loaf pans for about 50-60 mins until toothpick comes out clean
For mini loaves bake40-55 mins til center comes out clean with toothpick. Let cool 10 mins then turn out onto cooling rack. Cool completely and sprinkle with powdered sugar or make a glaze. YUM!
Luscious Lemon Bars

*LUSCIOUS LEMON BARS*
FOR CRUST:
1 C. very cold butter
2 C. All Purpose Flour
3/4 C. powdered sugar
1tsp.lemon zest
FOR FILLING:
1/2 tsp.baking powder
1/4 C. All purpose flour
4 eggs@ room temp.
2 C. Sugar
2 1/2 tsp lemon zest
1/3 C lemon juice
Powdered sugar for sifting over top when done
PREHEAT OVEN TO 350° & Grease 9x13 pan.
For crust :
Slice cold butter into chunks. Add to bowl or processor with the flour and powdered sugar. Cut butter in til mixed well. Press evenly into bottom of greased pan. Bake 15-20 mins til golden. Set aside to cool.
For filling:
In a small bowl, combine baking powder and flour. Set aside. In a med. bowl, whisk eggs. Add sugar, lemon zest and lemon juice. Mix well. Add the flour mix. Mix well. Pour filling over warm crust. Bake 25 mins until filling is set.
Cool bars to room temp. Sift powdered sugar on top after completely cooled. Enjoy!
