Sweet potato recipes needed
from zackey on 02/24/2015 10:04 PMI still have about 20 pounds of sweet potatoes left over from last year's harvest. Please tell me your favorite recipe.

4 large sweet potatoes ,scrubed clean
2/3 C Brown Sugar
2 Tbsp Orange Juice
1 tsp Orange Zest
1/2 tsp Nutmeg
2 C Shredded Coconut
1/2 C Sugar
1tsp.Cinnamon
Bag of large marshmallows
PREHEAT OVEN TO 350° Bake potatoes til tender, about 45-60 mins. Let cool to touch. Peel and mash the potatoes. Put in large bowl with the brown sugar, orange juice,orange zest and nutmeg. Mix well. In another medium bowl, toss coconut with the sugar and cinnamon. Press mashed potatoes around 1 large mashmallow so that marshmallow is completely covered, making a 2-3 inch ball. Roll in the coconut mixture. Place on greased baking sheet for 15-20 mins. Watch carefully so the marshmallows don't burst out of potato. Sweet but really good .

2 large sweet potatoes
2 Tbsp + 1/2 cup flour divided use
1 tspn salt
3/4 tsp garlic powder
1/2 tsp cinnamon
1 1/2 C oil for frying
PREHEAT OVEN TO 350° Scrub potatoes real good.Place in oven and bake for 45-55 mins til tender. Remove skin. Grate potatoes using a large hole grater. Place in large bowl. Mix in 2 Tbsp of flour, salt,garlic powder and cinnamon. Place the 1/2 cup of flour in a shallow bowl. Roll 1 Tbsp of potato mixture into 1 inch logs. Roll in flour. Coat well. Heat oil to 350°. Place logs in hot oil, frying about a min per side til golden. Remove and drain grease on paper towel. Enjoy.

4 medium sweet potatoes
1Tbsp oil
1/4 C milk
1/4 tsp salt
Pepper to taste
1 C shredded cheese, any you like
4 bacon strips cooked til crispy and crumbled
Sour Cream and Chives for serving
PREHEAT OVEN TO 400° Clean and pierce potatoes with a fork. Bake until tender. 40-60 mins. Let cool slightly . Slice potatoes in half lengthwise. Reduce oven temperature to 375° Scoop out the flesh into a large bowl, leaving a thin layer inside the potato skin. Place the skins back on baking sheet face up. Drizzle with oil and bake 10 mins. Meanwhile, mash the potato flesh with the milk,salt and pepper until smooth and creamy. After 10 mins, remove skins from oven. Fill each skin with equal amounts of mashed sweet potato. Top with cheese. Bake until cheese is melted, about 15 mins. Remove from oven, top with crumbled bacon bits, sour cream and chives if desired.
Stores in fridge for up to 3 days. *Use regular milk or half and half for best results*
This recipe is a bit of work but so worth it!

from socalgardengal on 02/25/2015 03:07 AMI should also add that in any of these recipes you can microwave the potatoes to save time. Just poke holes in them so they don't explode :)

I ended up moving (I still havent sold the house) and never got a chance to dig up the sweet potatoes. Are they definately bad (rotten) by now or should I dig them up to see? Will they automatically grow new sweet potato plants once the weather warms back up?

from zackey on 02/26/2015 04:49 PMHow cold was your winter? I had some get lost in the garden. I didn't find them until after it had frosted. An armadillo was digging around and exposed about 15 more pounds of them. I suggest you dig them up and see what it looks like. If they survived they might start new plants for next year.

Preheat oven to 375 degrees.
Lightly oil a baking sheet with olive oil.
Cut sweet potatoes lengthwise into fries and lightly sprinkle with olive oil and sea salt. Bake about 20 minutes or until golden.
